Growing Herbs Indoors and Out

Why the same herb behaves differently indoors versus outdoors, and how to work with each environment instead of against it.

Herbs are a good entry point into gardening because most are fast growers with a short seed-to-harvest cycle, and the payoff (fresh flavor) is immediate. But a herb grown on an indoor windowsill and the same herb grown in an outdoor bed are, functionally, being asked to perform in two very different environments — and understanding why changes how you care for each.

Indoors: light is the limiting factor

Most culinary herbs are native to sunny, open habitats (the Mediterranean basin, in many cases) and evolved to photosynthesize under intense, direct sun. Indoors, even a bright window rarely delivers that same intensity — glass filters some light, and the sun's angle through a window changes throughout the day. As a baseline, aim for at least 6 hours of direct sun through an unobstructed south-facing window; in winter, when day length and sun angle both drop, a small full-spectrum grow light on a 12-14 hour timer closes that gap reliably.

Outdoors: light is abundant, so airflow and soil take over

Outside, sunlight is rarely the limiting factor — instead, airflow and drainage do more to determine how an herb performs. Moving air strengthens stems (a response called thigmomorphogenesis) and reduces fungal disease by drying leaf surfaces faster after rain or watering.

Tip: harvest regularly, even before you need the herbs. Cutting stems triggers a plant's apical dominance response to shift — removing the top growth point signals the plant to branch out from lower nodes, producing a bushier plant instead of one that races upward toward flowering.

Transitioning herbs between indoors and outdoors

Many herbs can spend the growing season in outdoor pots, then move inside before the first frost. Because indoor light is weaker than outdoor sun, give the plant 1–2 weeks to acclimate — some yellowing or leaf drop during this window is a normal adjustment response, not a sign of a dying plant, as it reallocates resources to leaves better suited for lower light.
